🍃 Thistlefox’s Mocha Mint Whoopie Pies

✨Ingredients
For the Cakes:
- 2 cups all-purpose flour
- 1/2 cup baking cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup brown sugar
- 1/2 cup butter (cubed)
- 1 egg
- 1 tsp vanilla extract
- 1 cup buttermilk (shake before pouring!)

For the Filling:
- 4 tbsp butter (cubed)
- 3 oz cream cheese
- 1/3 cup Fluff marshmallow
- 2/3 cup powdered sugar
- 1/2 cup Hills Bros. Mocha Mint Cappuccino mix
🧁Directions
Step 1: Prepare the Cocoa Clouds
Preheat the oven to 250°F and line baking sheets with parchment paper.
In a large bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.
In a small bowl, mix the egg and vanilla. Set aside.
In another large bowl, cream the butter with an electric mixer until smooth. Add brown sugar and beat until light and fluffy.
Blend in the egg and vanilla mixture.
Add half the dry ingredients, then half the buttermilk. Mix gently. Repeat with remaining flour and buttermilk until fully combined.
Using an ice cream scoop, drop 6 mounds of batter onto the prepared sheet. Bake for 12-15 minutes, checking with a toothpick for doneness.
Cook on a rack. Repeat until all batter becomes soft, cake-like pies.
Step 2: Whip the Minty Mischief
In a medium bowl, beat butter, cream cheese, and marshmallow until creamy.
Add the Mocha Mint mix and blend until smooth.
Add powdered sugar and beat until the filling is fluffy and dreamy.
Step 3: Assemble the Woodland Sandwiches
Pair the cooled cakes. Frost the flat side of one with mint filling, then crown it with its partner.
Repeat until all pies are paired and filled.
